Take 2 cups of wheat flour and add 1/2 teaspoon salt and 1 tablespoon oil. Mix well.

Gradually add 1 cup of water to make a slightly firm dough, similar to paratha dough. Rest the dough covered for 15-20 minutes.

Boil 5-6 raw bananas and let them cool. Peel and grate the bananas until smooth.

Puree 2 tomatoes in a mixer bowl after roughly chopping them.

In a pan, heat 1 tablespoon oil and add 1 teaspoon Kashmiri red chili powder, 1/4 teaspoon turmeric powder, and 1 teaspoon coriander cumin powder. Sauté on low flame for 1-2 minutes.

Add the prepared tomato puree and cook for 3-4 minutes until oil separates from the mixture.

Mix in 1 tablespoon jaggery and 1 teaspoon salt, then add 2 tablespoons date tamarind chutney and stir well.

Add the grated bananas to the mixture and combine thoroughly without adding water, ensuring the stuffing is dry.

Adjust seasoning with 1/2 teaspoon salt, 1 tablespoon sugar, and 1 teaspoon lemon juice, then mix well and set aside to cool.

Knead the rested dough again and divide it into portions. Roll each portion into a flat disc without using dry flour.

Spread the prepared stuffing evenly over the rolled dough, then roll it tightly and cut into pieces.

Press each piece gently to form bites, ensuring they are not too thick.

Heat a non-stick pan and add 1 tablespoon ghee. Place 10-12 bites in the pan and roast on medium heat for 5-6 minutes, flipping until crispy on both sides.

Assemble the dabeli bites on a serving plate, spreading green chutney, sweet chutney, garnishing with masala sing, anardana, and sev.
