Ma’amoul Eid Cookies

½ cup powdered milk
1 tsp mahleb
½ tsp ground mastic gum (optional)
1 tsp instant dry yeast
1 tsp baking powder
1 ¼ cup water (or milk)

Combine flour, powdered sugar, powdered milk, baking powder, mahleb, ground mastic gum, and instant dry yeast in a large bowl and mix.

Add in the shortening (or ghee) and mix by hand.

Work with a small amount of dough at a time. Take some dough and gradually add water and mix until the dough becomes easy to shape.

Stuff this dough with a date mix (ground dates, cinnamon, ground anise, ground fennel seeds, ground nutmeg, and butter) or the date with nut mix (same as before with the addition of walnuts) and shape as you like.

Once you've stuffed and shaped the small amount of dough, repeat steps 3-4 until you've gone through all of the dough.

Bake at 350 F (180 C) or until light golden brown.
