Ma’amoul Eid Cookies

Ma’amoul is a traditional Middle Eastern cookie, often enjoyed during Eid celebrations. Originating from Lebanon, these cookies are filled with a variety of sweet fillings such as dates, nuts, or figs, representing hospitality and celebration. They are often shaped using decorative molds and dusted with powdered sugar, making them a festive treat. Mix semolina and all-purpose flour in a large bowl.
Add melted butter and powdered sugar to the flour mixture and mix until crumbly.
Dissolve yeast in warm water and add to the mixture along with orange blossom water.
Knead the dough until smooth and let it rest for 30 minutes covered with a damp cloth.
Prepare the filling by mixing dates, nuts, cinnamon, and a pinch of salt until well combined.
Divide the dough into small balls and flatten each ball in your palm.
Place a spoonful of filling in the center of each flattened dough and fold it over.
Shape the filled dough into a ball and press into a mold to create patterns.
Place the cookies on a baking sheet lined with parchment paper.
Bake in a preheated oven at 350°F until lightly golden, about 15-20 minutes.
Let the cookies cool completely before dusting with powdered sugar.
