handful of mint leaves, finely chopped

If using spinach that releases a lot of water, cook uncovered until the water evaporates; otherwise, turn off the stove after 3-4 minutes.

Transfer the cooked spinach to another plate to cool faster before adding it to the yogurt.

Once cooled, add the spinach to the yogurt along with salt; stir well to combine.
