Spinach Raita is a refreshing Indian side dish that combines yogurt with spinach and spices. Traditionally served in North Indian meals, it provides a cooling contrast to spicy dishes. This raita is not only nutritious but also a great way to incorporate greens into your diet. Variations exist across India, with different regions adding their unique twist, making it a beloved staple in many households.

Heat a medium pan on medium heat and add the oil.
Wait for the oil to heat up, then add the mustard seeds.
Once the mustard seeds start popping, add the cumin seeds and wait for them to pop as well.
Add the finely chopped garlic and green chilies; sauté for about 30 seconds until the garlic is not raw.
Add the finely chopped mint leaves and then the spinach; stir to combine.
Cover the pan and cook for about 3 to 4 minutes until the spinach condenses.
If using spinach that releases a lot of water, cook uncovered until the water evaporates; otherwise, turn off the stove after 3-4 minutes.
Transfer the cooked spinach to another plate to cool faster before adding it to the yogurt.
Once cooled, add the spinach to the yogurt along with salt; stir well to combine.
