Start by making the sauce: add sugar to a very hot pot until it starts to melt.

Add 2 tablespoons of water and 4 tablespoons of tamarind to the melted sugar, then 2 tablespoons of fish sauce and set aside.

Rest noodles in room temperature water for an hour before cooking.

Finely chop garlic and red onion, and set aside.

Cut tofu into edible chunks and set aside.

Prep daikon radish and garlic chives, keeping them aside.

Heat a wok until super hot and add rapeseed oil generously.
