Cut the pork meat into bigger pieces.
Peel and dice the onions.
Cut garlic into smaller pieces.
Place the meat into a baking tray.
Add salt and black pepper to the meat.
Add onions and garlic to the meat.
Crush caraway seeds and mix with the meat.
Add 150 ml of beer to the meat.
Cover the top and slowly bake at 120°C for 2 hours.
Meanwhile, prepare the sauerkraut by dicing bacon and onions.
Bring the sauerkraut to a boil.
Add 1 tablespoon of crushed caraway seeds and 1 teaspoon of salt to the sauerkraut.
Cook the sauerkraut for 25 minutes on medium heat.
Melt butter in a pan, add diced bacon and onions, and sauté until cooked.
Add 1 tablespoon of all purpose flour to the bacon and onion mixture and mix well.
Add this mixture to the sauerkraut and cook for another 10-20 minutes to thicken.
Add sugar to the sauerkraut to balance the sourness.
After 2 hours, uncover the meat, stir it, and put it back in the oven uncovered, raising the heat to 200°C until golden brown.
Serve pork bites with potato dumplings and sauerkraut.
