Heat a non-stick pan over medium-high heat and add 1 teaspoon avocado oil.

Add the smoked tofu to the pan and sauté for 3-4 minutes until crispy, then set aside.

Add another teaspoon of oil to the pan, then add the red onion and broccolini, sautéing for a couple of minutes.

Add the cremini mushrooms and carrots to the pan and sauté for a couple of minutes.

Add the red bell pepper and baby corn, sauté for another couple of minutes.

Add the stir-fry sauce back into the pan along with the tofu and sauté for about another minute, being careful not to overcook the veggies.
