Instructions

  1. 1Peel and slice the eggplants into rounds, sprinkle with salt, and let them sit for about 30 minutes to draw out moisture.
  2. 2Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  3. 3In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  4. 4Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned.
  5. 5Stir in the diced tomatoes, salt, black pepper, paprika, and cumin. Cook for another 5 minutes until the tomatoes soften.
  6. 6Layer the sliced potatoes and eggplants in a large pot or deep baking dish, alternating between the two.
