Mexican Shrimp Cocktail

In a pot, add enough water to cover the shrimp, along with 1/4 onion, 2 garlic cloves, and salt.

Bring the water to a boil.

Add the shrimp to the boiling water, ensuring they are fully covered.

Once the water comes to a boil again, remove the shrimp and transfer them to an ice bath to stop the cooking process.

Save the shrimp broth and let it cool down for later use.

Dice the veggies: 1 serrano pepper, 1 tomato, 1 cucumber, and 1/4 cup cilantro.

Remove the shell from the shrimp and add them to a bowl. Optionally, dice the shrimp.

Add the juice of 2 limes to the bowl.

Strain and add about 5 cups of shrimp broth to the bowl.

Add 1/2 cup of Clamato and 1/4 cup of orange juice to the mixture.

Add 1 cup of ketchup, adjusting to taste.

Add some salsa Magi and salt to taste.

Mix everything thoroughly and taste, adjusting with more shrimp broth, ketchup, or salt as needed.
