Make almond paste by mixing 200 grams super fine almond flour, 200 grams powdered sugar, 17 grams egg white, and 1 tablespoon water until it forms a paste.

Wrap the almond paste in cling wrap and refrigerate.

Cook together 20 grams bread flour, 60 grams whole milk, and 60 grams water over medium heat until it thickens into a paste.

In a bowl, weigh out 500 grams bread flour, add 50 grams granulated sugar, and 1/4 teaspoon salt, then mix.

Add the cooled paste to the flour mixture along with 235 milliliters milk and 8 grams rapid rise instant yeast.

Mix until a shaggy dough forms, then add 1 egg and softened butter.

Knead the dough by hand for about 5-6 minutes until smooth.

Butter a bowl and place the dough inside, cover with a shower cap, and refrigerate overnight.

The next day, remove the dough from the fridge and let it rise until doubled in size, then punch down the dough.
