Belgian Liege Waffles

Cultural Context

Originating from the city of Liège in Belgium, these waffles are known for their rich, dense texture and caramelized exterior due to the pearl sugar. Traditionally enjoyed as a street food treat, they are often eaten warm and are a beloved part of Belgian culinary culture. Today, Liege waffles have gained popularity worldwide, often served with toppings like whipped cream, fruit, or chocolate.

1

Add the dry ingredients and yeast to the mixing bowl; do not add the pearl sugar yet.

2

Add 1/2 cup of warm water to the dry mix and mix on slow speed.

3

Slowly add the melted butter until incorporated.

4

Add eggs until the batter is smooth and silky.

5

Transfer the thick and sticky dough to a bowl, cover with plastic wrap, and let rise for about 1 and 1/2 hours or until doubled in size.

6

Once doubled in size, stir in the packet of pearl sugar until evenly distributed throughout the dough.

7

Divide the dough and roll into 12 even balls; it may help to use a cookie scoop or an ice cream scoop to distribute the dough.

8

Cover and let rise for another 15 minutes.

9

Grease both sides of your Belgian waffle iron with non-stick cooking spray.

10

Place one ball of the dough into your waffle iron at a time, close, and cook until golden brown, approximately 2 to 3 minutes.

11

The waffle should be a deep golden brown and the sugar will be starting to melt but not fully melted within the waffle.

12

Carefully remove with a spatula and serve immediately.
