Today, variations can be found across West Africa, with each region adding its unique twist to the recipe.

Bell pepper offers flavor without heat.
Peel the brown skin off the fresh cassava and remove the inner woody stem.
Cut the cassava into small pieces.
Blend the cassava with a little water until thick, not runny.
Pour the cassava mixture into a sieve or cheesecloth and squeeze out 99% of the water.
Add chopped or grated onion and salt to the cassava mixture and stir well.
Shape the mixture into small balls, about the size of a lime or small egg.
Heat cooking oil in a skillet over medium heat.
Drop the balls into the hot oil and fry for about 6 to 8 minutes, turning occasionally until golden brown and crispy.
Remove the fried balls and place them on paper towels to drain excess oil.
