Ajvar

Today, ajvar is enjoyed worldwide, with variations that may include different spices or additional vegetables.

8 sweet red peppers
1 eggplant
2 cloves of garlic, chopped
3 T of white vinegar
¼ C of vegetable oil
salt and pepper to taste

Place peppers and eggplant onto a very hot grill. Roast, turning occasionally while the skins blacken and blister. Transfer roasted vegetables to a large bowl and cover with foil. Cool completely.

Peel the skins and seeds away from the peppers. Peel the skin from the eggplant and roughly chop the flesh. Place the prepared peppers, eggplant, garlic and vinegar into a food processor and run on low to roughly chop. Slowly add the oil and process to desired consistency – chunky or thinned. Season with salt and pepper.

Transfer to a bowl and serve with warmed bread. Store in an airtight container and consume within 10 days.
