Today, ajvar is enjoyed worldwide, with variations that may include different spices or additional vegetables.

10 kilograms fresh peppers
400 milliliters oil
70 grams salt

Roast the peppers and let them cool down.

Peel the peppers, discarding the skin, seeds, and stem.

Place the peeled peppers in a sieve over a pot to drain overnight.

Grind the peppers using a manual or electric grinder, blender, or by chopping.

Heat 400 milliliters of oil in a larger, shallower pot.

Add the ground peppers to the heated oil and stir to combine.

Add 35 grams (2 level tablespoons) of salt once the peppers start frying.

Fry the mixture for 1.5 to 3 hours, stirring continuously as it thickens.

Add 3 tablespoons of vinegar and adjust seasoning to taste.

Preheat the oven to 100°C and sterilize jars for 15 to 20 minutes.

Fill hot jars with hot ayvar, pressing down to expel air.

Close the jars tightly and turn them upside down to cool.
