5 large garlic cloves (24 g)

1 tsp cumin seeds
2 small cinnamon sticks
5 cardamom pods
6 cloves
1 bay leaf
7-8 black peppercorns
750 g chicken
Salt, as needed
½ tsp turmeric powder
1½ tsp chicken powder or stock cube (optional)
Juice from 1 whole lime
1 tsp ghee
½ tsp ground black pepper
1½ tsp whole wheat flour (Atta) for thickening (optional)
A small pinch of sugar

Prepare the Paste: Blend cubed onions, garlic cloves, ginger, 1 cup coriander, green chilies, and ¼ cup water into a smooth paste. Set aside.

Cook the Spices: Heat oil in a saucepan. Once hot, add cumin seeds and sauté until fragrant. Add the chopped onions and sauté until soft and light brown. Add cinnamon sticks, cardamom, cloves, bay leaf, and peppercorns. Sauté for another moment.

Cook the Chicken: Add the chicken, salt, and turmeric. Sauté on high heat for a few minutes. Then add the prepared garlic-chili paste. Sauté on medium-high heat for about 5 minutes.

Simmer the Shorba: Add 6 cups of water and adjust salt to taste. If using, add chicken powder or a stock cube (adjust salt accordingly). Cover and simmer on low heat for about 30 minutes.

Final Touches: Open the lid. Add lime juice, ghee, black pepper, and a small pinch of sugar. If desired, mix atta with water and add to thicken. Garnish with chopped coriander.
