Crush the potato chips in a food processor until broken down.

Add 3 tablespoons of flour, dried dill, a pinch of salt, and black pepper to the crushed potato chips and mix.

Prepare a breading station with seasoned flour, an egg wash (eggs whisked with milk), and the potato chip coating.

Pat the shrimp dry and coat them in the seasoned flour.

Dip the floured shrimp into the egg wash, then coat in the potato chip mixture.

Place the coated shrimp on a parchment-lined tray.

Heat at least 4 inches of canola oil to 350°F.

Fry 5 or 6 shrimp at a time for about 3 minutes until golden brown.
