Heat a cast iron wide pan and add butter.

Add 600 grams beef chunks and sauté until the meat changes color.

Cover the meat and continue to sauté until all the water evaporates, adding about half a cup of water as needed.

Keep the flame low and check frequently, adding water until the meat is very soft.

Transfer the cooked Kavurma meat into another smaller pan.

In the same pan, add 2 tbsp butter and some vegetable oil to cook the rice.

Soak the rice in hot salty water for half an hour.

Add 2 tsp salt to the rice and sauté for 3-4 minutes.

For 2 cups of rice, add 2 and a half cups of hot water, a couple of drops of lemon juice, and a sprinkle of sugar.

Cook on low until the rice absorbs all the water for about 15 minutes.

Turn off the heat and let the rice rest for at least 20 minutes before gently folding it to make it fluffy.

Reheat the meat with some butter before serving, seasoning with salt and optionally black pepper or oregano.

Serve the meat and rice together, pressing the rice into a bowl before turning it onto a plate.
