1 yellow onion, diced
2 tbsp minced garlic
1 lb hot/mild Italian sausage
3 lbs lean ground beef
4.5 oz tomato paste
Pepper, to taste
1-2 tsp Tony’s seasoning, to taste
1-2 tsp Complete Seasoning, to taste
1-2 tsp garlic powder, to taste
1-2 tsp Italian seasoning, to taste
1 pack mini pepperoni
1 can mild Rotel
1 pack frozen spinach
2 bay leaves
2 tsp Italian seasoning
1/2 tsp red pepper flakes, to taste
48 oz marinara sauce
1/2 cup heavy cream
4-6 cups beef stock (adjust to your soup preference)
1 lb lasagna noodles, broken into pieces
1 cup Parmesan
1 cup ricotta
1 cup mozzarella
1/4 cup fresh basil, chopped

In a bowl, combine Parmesan, ricotta, mozzarella, and basil. Set aside.

Heat olive oil in a large soup pot or Dutch oven over medium heat. Add onion and cook for 4 minutes, then add garlic and cook until fragrant.

Add sausage and ground beef, breaking up with a wooden spoon. Season with Complete Seasoning, pepper, garlic powder, Italian seasoning, red pepper, and Tony's. Cook until meat is no longer pink.

Stir in tomato paste and mini pepperonis. Cook for a few minutes, then add beef stock and marinara. Bring to a boil.

Add lasagna pieces, reduce heat, and simmer for 10 minutes or until al dente, stirring occasionally.

Once noodles are cooked, stir in heavy cream. Adjust seasoning if needed. Serve with a dollop of the ricotta mixture. Enjoy!
