Traditionally made with just egg yolks and butter, it embodies the elegance of French culinary techniques. Whisk egg yolks, lemon juice, and water in a heatproof bowl until combined.
Place the bowl over a pot of simmering water, ensuring the bowl doesn't touch the water.
Whisk continuously until the mixture thickens and doubles in volume, about 3-5 minutes.
Gradually add melted butter while whisking until fully incorporated and the sauce is smooth.
Season with salt, white pepper, and cayenne pepper to taste.
If the sauce is too thick, whisk in a few drops of warm water to reach desired consistency.
Remove from heat and stir in finely chopped fresh herbs if desired.
Serve immediately or keep warm over low heat, stirring occasionally.
