1 red onion, diced

3 celery stalks, finely chopped
3 large potatoes, chopped into large bite-sized cubes
200 g baby king oyster mushrooms, quartered
2 veggie sausages, torn into bite-sized pieces
2 tomatoes, diced
2 tbsp avocado oil
2 tbsp tomato paste
leaves from a few sprigs of thyme
1 cup red wine or veggie stock
1 cup frozen peas
5 cups veggie stock
1.5 tbsp soy sauce
1 tsp dark soy sauce
freshly chopped parsley for topping

Dice 1 red onion and set aside.

Finely chop 3 cloves of garlic.

Chop 2 carrots into large bite-sized pieces.

Finely chop 3 celery stalks.

Chop 3 large potatoes into large bite-sized cubes.

Quarter about 200 g of baby king oyster mushrooms.

Tear apart 2 veggie sausages into bite-sized pieces.

Dice 2 tomatoes.

In a stock pot over medium-high heat, add 2 tbsp of avocado oil and the torn veggie sausages. Sauté for about 5 to 6 minutes until crispy, then set aside.

In the same stock pot, add another 2 tbsp of avocado oil, then add the diced onions and garlic. Sauté for about 5 to 6 minutes until the onions are caramelized.

Add the chopped celery and carrots to the pot and sauté for a few minutes.

Make a well in the middle of the pan and add 2 tbsp of tomato paste and the leaves from a few sprigs of thyme. Stir well.

Add the diced tomatoes and use their juices to deglaze the pan.

Pour in 1 cup of red wine or veggie stock and stir. Let it bubble for a few minutes.

Add the chopped potatoes, quartered mushrooms, 1 cup of frozen peas, and about 5 cups of veggie stock to the pot. There should be enough broth to just cover the veggies.

Add 1.5 tbsp of soy sauce and 1 tsp of dark soy sauce. Stir well.

Simmer on medium-low for about 25 to 30 minutes until the stew thickens and flavors concentrate.

Transfer about 3 cups of the stew into a blender and blend on high for a few seconds. Alternatively, use a stick blender if available.

Transfer the blended stew back to the pot and stir well.

Plate the stew generously and top with the crispy sausages and freshly chopped parsley before serving.
