Originating from the rich culinary traditions of Cameroon, Beef Tripe Stew, known as Kondre, is a beloved dish often prepared for family gatherings and special occasions. It showcases the resourcefulness of using every part of the animal, turning tripe into a hearty meal full of flavor. Today, this dish is cherished not only in Cameroon but also in various parts of West Africa, where it is enjoyed with rice or plantains.

Clean the beef tripe thoroughly under cold water.
Cut the beef tripe and beef into bite-sized pieces.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and ginger; cook for 1-2 minutes until fragrant.
Add diced tomatoes and bell peppers; cook until softened, about 5 minutes.
Add the beef and tripe to the pot; brown on all sides, about 5-7 minutes.
Pour in enough water to cover the meat; add bay leaves, thyme, cayenne pepper, salt, and black pepper.
Bring to a boil, then reduce heat to low and simmer for 1.5-2 hours until tender.
Add diced carrots and potatoes; cook for an additional 30 minutes until vegetables are tender.
Adjust seasoning to taste before serving.
