Tofu is a plant-based alternative, while chicken thighs are often less expensive than breasts.

1

Clean and cut vegetables into slices: carrot, bell peppers, onions, and spring onions.

2

Season chicken breast strips with 1 tablespoon of adobo seasoning, ginger and garlic paste, and curry powder; mix well and refrigerate to marinate.

3

Heat vegetable oil in a saucepan.

4

Add all the vegetables to the pot and cook for 4-5 minutes until crunchy; then pour them into a plate.

5

In the same pot, heat more oil and add the marinated chicken; cook until well done.

6

Add one stock cube to the chicken and stir.

7

Prepare cornstarch by mixing it with water; the amount of water doesn't matter as more will be added later.

8

Add the cornstarch mixture to the cooked chicken and add more water to cover the chicken; cover and let it cook.

9

After about 10 minutes, stir the sauce to check thickness; it should have thickened nicely.

10

Add the cooked vegetables back into the pot and mix until combined.

11

Finish with spring onions and give a quick stir before serving with white rice.
