Heat vegetable oil in a kettle over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5-7 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add diced pork shoulder and brown on all sides, about 8-10 minutes.
Sprinkle paprika over the meat and stir to coat evenly.
Add chopped carrots, bell peppers, and potatoes to the kettle.
Stir in tomato paste and mix well with the vegetables.
Pour in red wine and scrape the bottom of the kettle to deglaze.
Add water, bay leaves, thyme, salt, and black pepper; stir to combine.
Bring to a boil, then reduce heat to low and cover.
Simmer for 1.5 to 2 hours, until pork is tender.
Taste and adjust seasoning as needed.
Garnish with chopped parsley before serving.
