Start by blending 1/3 cup of cottage cheese until smooth using a blender or food processor.
Add 1/3 cup of unsweetened applesauce to the cottage cheese and blend until smooth.
Transfer the blended mixture to a mixing bowl.
Add 2/3 cup of cane sugar, 1/4 cup of light olive oil, 1 teaspoon of apple cider vinegar, 2 teaspoons of vanilla extract, and 3 eggs to the mixing bowl and mix until well combined.
In a separate bowl, combine 1 1/2 cups of oat flour, 1 cup of almond flour, 1/3 cup of cocoa powder, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and 1/2 teaspoon of salt. Whisk until well combined.
Add the dry ingredients to the wet mixture and mix until a thick batter forms.
Fold in 1/2 cup of chocolate chunks, reserving about 2 teaspoons for topping the muffins.
Prepare muffin liners by lightly spraying them with coconut oil.
Using a 1/3 cup batter scoop, fill each muffin liner just over the top with batter.
Sprinkle the reserved chocolate chunks on top of the muffins and poke a hole in the center for the chocolate sauce.
Preheat the oven to 425°F and bake the muffins for 5 minutes.
After 5 minutes, reduce the oven temperature to 350°F and bake for an additional 14 to 16 minutes, or until a toothpick comes out clean.
To make the chocolate sauce, blend 1/4 cup of cottage cheese, 1/4 cup of pure maple syrup, 2 tablespoons of cocoa powder, 1/2 teaspoon of vanilla, and a pinch of salt until smooth.
Poke a hole in the center of each muffin with a slender spoon handle and fill it with the chocolate sauce.
