43 g chocolate chips
extra chocolate chips + crystal sugar for on top of the muffins (optional)
1/2 cup chocolate chips
1/4 cup heavy cream

Preheat the oven to 180°C (350°F).

In a bowl, mix together the eggs, granulated sugar, oil, sour cream, and vanilla extract until well combined.

In another bowl, sift together the cocoa powder, all-purpose flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chocolate chips.

Scoop the batter into a muffin tin lined with muffin liners, filling each about 2/3 full.

Sprinkle extra chocolate chips and crystal sugar on top of each muffin (if using).

Bake in the preheated oven for about 18-20 minutes or until a toothpick comes out clean.

While the muffins are baking, prepare the chocolate ganache by heating the heavy cream until just simmering, then pour it over the chocolate chips and let it sit for a few minutes before stirring until smooth.
