1 tbsp chili oil
1 cup jasmine rice
1 cup water
3-4 pieces of garlic
3-4 sticks of green onion
4 dried chili peppers
175 g extra firm tofu
2 Asian eggplants

Pat dry the smoked tofu and slice it width-wise.

Chop the garlic chives and broccolini into bite-sized pieces.

Slice the fresh rice noodle rolls into 2-inch lengths.

Microwave the rice noodles for 30 seconds or leave at room temperature before working with them.

In a bowl, combine soy sauce, dark soy sauce, plant-based oyster sauce, grated garlic, sesame oil, cayenne pepper, and water. Stir to combine and set aside.

Heat a non-stick pan over medium heat and add avocado oil.
