Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup honey
  • 2 tbsp lime juice
  • 2 tbsp Sriracha sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 tbsp olive oil

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a bowl, mix together honey, lime juice, Sriracha sauce, garlic powder, onion powder, salt, and black pepper to create the marinade.
  3. 3Add the chicken pieces to the marinade and let them sit for at least 30 minutes.
  4. 4In a separate bowl, set up a breading station with flour, beaten egg, and breadcrumbs.
  5. 5Take each marinated chicken piece, coat it in flour, dip it in the egg, and then coat it with breadcrumbs.
  6. 6Place the breaded chicken pieces on a baking sheet lined with parchment paper.
  7. 7Drizzle olive oil over the chicken poppers to help them crisp up in the oven.
  8. 8Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
  9. 9Serve warm with extra Sriracha or lime wedges on the side.
