1 lb top round of axis deer
2 tablespoons bacon fat
1 teaspoon salt
1 teaspoon pepper
1/2 cup blackberry marmalade
1/4 cup blackberry brandy
1 cup beef broth
1 cup blackberries
4 oz goat cheese
8 toast points

1

Trim the top round of axis deer, removing any sharp edges and excess fat.

2

Cut the top round into smaller chops, similar in size and shape to medallions.

3

Use a jacquard tenderizer on the meat to enhance tenderness.

4

Heat a sauté pan and add a small amount of bacon fat until it starts to smoke.

5

Season the meat with salt and pepper before adding it to the pan.

6

Lay the meat in the pan away from you to avoid splatter and allow it to sear without moving it.

7

Cook the meat until it is browned on one side, then flip it to brown the other side, aiming for rare to medium-rare doneness.

8

Remove the meat from the pan and set it aside to prevent it from sweating and releasing juices.

9

Deglaze the pan with blackberry brandy, scraping up the fond from the bottom.

10

Add blackberry marmalade and beef broth to the pan to create a sauce, allowing it to reduce and caramelize.

11

Serve the sautéed meat on toast points, topped with goat cheese and the blackberry glaze.
