Indian-Style Dutch Kroket

Cultural Context

The kroket is a beloved Dutch snack, often filled with meat or vegetables, and has found a unique twist in Indian cuisine. This fusion dish combines the Dutch method of deep-frying with Indian spices and flavors, making it a popular street food in India. Traditionally enjoyed as a snack or appetizer, the Indian-Style Kroket showcases the rich culinary heritage of both cultures, and has gained popularity beyond its origins, often served at parties and gatherings.

1

Boil unpeeled potatoes the day before and let them cool overnight.

2

Peel the potatoes and press them through a potato press or mash finely with a potato masher or fork.

3

Add potato starch, melted butter, salt, pepper, and nutmeg to the potatoes and mix well, being careful not to overwork the mixture.

4

Take a handful of dough and shape it into about a 1-inch diameter rope.

5

If the dough is too sticky, add a little more potato starch and moisten your hands with water while shaping.

6

Cut the ropes into 2-inch long pieces and place them into a lightly greased casserole pan.

7

Alternatively, add the potato dough to a large piping bag and pipe out 1-inch diameter ropes or shape small balls.

8

Place the shaped croquettes in the freezer for about 15 to 20 minutes to make breading easier.

9

In a deep plate, add egg whites and one whole egg (recommended) for the egg mixture.

10

In another deep plate, add flour, and in a third deep plate, add breadcrumbs.

11

Bread the croquettes by first dipping them in flour, then the egg mixture, and lastly in breadcrumbs using the dry hand wet hand technique.

12

Return the breaded croquettes to the freezer while heating the oil to around 350 degrees Fahrenheit.

13

To test the oil temperature without a thermometer, use a wooden skewer or cooking spoon; small bubbles should appear around the shaft when the oil is ready.

14

Carefully lower the croquettes into the hot oil using a slotted spoon and fry until golden brown.

15

Remove the croquettes with a slotted spoon and place them on a plate lined with paper towels.
