Preheat the oven to 140°C (275°F).

Rub olive oil on the outside of the leg of lamb and season with salt and freshly ground black pepper.

Heat a cast iron pot over high heat and add a little oil.

Sear the lamb in the pot for 8-10 minutes, turning to build color on all sides.

Remove the lamb from the pot and set aside.

Add sliced onions and plain flour to the pot, stirring for about 8 minutes until softened.

Add fresh rosemary and thyme to the onions and cook for about 1 minute.

Pour in 150 ml of red wine and 150 ml of lamb stock, stirring to combine.

Nestle the lamb back into the pot, cover with a lid, and place in the preheated oven.

Cook the lamb for about 4 hours.

20-30 minutes before the end, crush 5 cloves of garlic and mix with white wine vinegar and fresh parsley.

Pour the garlic mixture over the lamb and continue cooking until the 4 hours are complete.

After 3.5 hours, check the lamb and turn it over gently to ensure even cooking.

Pour some of the cooking juices over the lamb.

Remove the lid and let the lamb cook uncovered for an additional 10 minutes.
