2 Tbsp (40ml) Olive Oil, Divided
1.4kg (3.1lbs) Boneless & Butterflied Lamb Leg
2 Brown (Yellow) Onions, Roughly Chopped
4 Small or 2 Large Carrots, Roughly Chopped
3 All-Rounder Potatoes, Roughly Chopped
5 Garlic Cloves, Crushed
1 litre (4 Cups) Beef Stock
10g (0.3oz) Flat Leaf Parsley, Roughly Chopped (Optional)
1 Cup (240g) Plain Greek Yogurt
1 tsp (2.5g) Ground Cumin
Pinch Of Cayenne Pepper
