Cream together 1 cup of butter and 2 cups of sugar in a mixer.
Add 2 teaspoons of almond extract and 2 eggs, mixing until creamy.
Gradually add 4 cups of flour, mixing on low to avoid flour flying up.
Grease two 9-inch round pans and line the bottoms with parchment paper.
Divide the dough into both pans and press it in.
Decorate the tops with fork marks or patterns as desired.
Brush the tops with reserved egg white for gloss.
Press sliced almonds into the top of one of the cakes.
Preheat the oven to 350°F (175°C).
Bake for 30 minutes, checking for golden edges and tops.
Let the cakes cool in the pans for 15 minutes before removing.
