Cut the chicken thighs into bite-sized pieces.

Add the sliced carrots and the soaking water from the dried shrimps, plus enough water to almost cover the ingredients (about 400 ml total).

Season with 1 tablespoon of Chinese cooking wine, 1 tablespoon of oyster sauce, 2 teaspoons of fish sauce, 2 teaspoons of dark soy sauce, and 1 teaspoon of sugar; mix in the tofu.

Bring the mixture to a boil, then lower the heat to a simmer, cover, and simmer for about 12 to 15 minutes until the carrots are tender.

Once the carrots are tender and the liquid reduced, taste and adjust for seasoning.

Thicken the sauce with a cornstarch slurry made from 2 teaspoons of cornstarch mixed with 2 tablespoons of water.
