Clean the perch by slicing behind the pelvic fin down to the spine without cutting through it.

Slice up to the vent, twist the head until the spine breaks, and pull the head with guts attached out.

Flip the perch over and cut behind the anal fin until hitting the bone, then pull the whole thing out.

Make shallow cuts along both sides of the spine to remove the dorsal fin.

Peel the skin off the perch using your thumbs and fingers.

Wash the perch before cooking.

Fill a cast iron pan with about one inch of high temp oil and heat to 350 degrees.

Season the fish with salt and pepper on both sides.
