Roasted Rack of Lamb

1 rack of lamb
kosher salt

Season the rack of lamb generously on both sides with kosher salt and freshly ground black pepper.

In a food processor, combine olive oil, fresh rosemary, fresh thyme leaves, 6 cloves of garlic, and the zest of 1 lemon.

Pulse the food processor until everything is chopped and blended together into a marinade.

Spread the marinade on top of the rack of lamb and let it marinate for about an hour at room temperature.

Preheat the oven to 450 degrees Fahrenheit.

Place the rack of lamb in the oven and cook for about 15 minutes.

Open the oven, turn the rack of lamb around for even cooking, and cook for another 10 to 15 minutes.

Check the internal temperature; 130 to 140 degrees Fahrenheit for medium rare, or 15 minutes for medium.

Remove the rack of lamb from the oven and let it rest before slicing between the bones.
