Mango Shrimp Ceviche

1 lb shrimp, peeled and deveined
2 ripe mangoes, diced
1/2 red onion, finely chopped
1 jalapeño, seeded and minced
1/2 cup fresh cilantro, chopped
1/2 cup lime juice
1/2 tsp salt
1/4 tsp black pepper
1 avocado, diced (optional)

In a bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged in the juice.

Cover the bowl and refrigerate for about 30 minutes, or until the shrimp turns pink and opaque, indicating it is 'cooked' by the acidity of the lime juice.

While the shrimp is marinating, prepare the other ingredients: dice the mangoes, chop the red onion, mince the jalapeño, and chop the cilantro.

Once the shrimp is ready, drain excess lime juice if desired, and add the diced mango, red onion, jalapeño, and cilantro to the bowl.
