Baked chickpeas add crunch with less fat.
Heat 1 liter of water in a pot until boiling.
Add 2 cups of sweet corn to the boiling water.
(Optional) Add some salt to the water if desired.
Boil the corn for about 2 minutes until they puff up and look round.
Drain the corn using a strainer and let it cool under a fan for 15-20 minutes to dry.
In a large bowl, add the boiled corn and mix in spices: black pepper powder, salt to taste, 1 tablespoon ginger-garlic paste, and 1 teaspoon red chili powder.
Add 2-2.5 tablespoons of corn flour and 2-2.5 tablespoons of rice flour to the bowl.
Mix the ingredients using a spoon to avoid sticking to your hands.
Heat oil in a pan until very hot for frying the corn.
Carefully add the corn to the hot oil, covering half of the pan with a lid to prevent splattering.
Fry until the corn is golden brown and crispy, checking occasionally for color.
Once done, remove the corn from the oil using a strainer to keep them crispy.
In a large bowl, combine the fried corn with chopped green chili, red onion, and coriander leaves.
Add chaat masala and red chili powder to the mixture, along with lemon juice.
Mix everything well and serve immediately to maintain crispiness.
