Set a saucepan to medium heat and add water.

Add 10 chile guajillos, 2 chilies anchos, and half of a white onion to the saucepan.

Cook for about 10 minutes until ready.

Transfer everything from the saucepan into a blender, including most of the water.

Add 5 garlic cloves, 1/4 teaspoon allspice, 1 teaspoon oregano, and 1/2 teaspoon black pepper to the blender.

Add 2 tablespoons of beef bouillon and 1/2 tablespoon of chicken bouillon to the blender.

Blend the mixture until smooth.

In a large pot, add 8 lbs of a combination of chank, chamorro, oxtail, and chuck roast.

Season the meat with salt and black pepper to taste.

Add 5 Roma tomatoes, 1/2 red onion, 1/2 white onion, and 2 poblano peppers to the pot.

Add 24 oz of potatoes, 4 carrots, and some olives to the pot, including some juice from the olives.

Add 1 can of salsa elato to the pot for extra flavor.

Add pickled jalapenos and bay leaves to the pot.

Pour in 1 beer of your choice to tenderize the meat.

Add the blended salsa mixture to the pot and mix everything very well.

If the pot is too small, transfer everything to a bigger pot.

Set the stove to medium heat, cover the pot, and cook for at least 2 hours.

After 2 and a half hours, check the meat; it should be tender and fall apart easily.
