Egg Bites

6 large eggs
1/2 cup cottage cheese
1/2 cup shredded cheese (cheddar or your choice)
1/4 cup diced bell peppers
1/4 cup diced onions
1/4 cup cooked and crumbled bacon (optional)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder

Preheat your oven to 350°F (175°C).

In a mixing bowl, whisk together the eggs, cottage cheese, salt, black pepper, and garlic powder until well combined.

Stir in the shredded cheese, diced bell peppers, onions, and bacon (if using).

Grease a muffin tin with cooking spray or oil to prevent sticking.

Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.

Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
