Cook about 1/3 pound of spinach in a pan until wilted, tossing occasionally.

Remove the wilted spinach from the pan and drain it in a small colander over a bowl.

Squeeze out excess moisture from the spinach and give it a rough chop.

Preheat the oven to 350°F.
