Ingredients

  • 2 lbs fresh fish fillets (such as snapper or tilapia)
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1/2 tsp thyme
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 cup water

Instructions

  1. 1Rinse the fish fillets under cold water and pat dry with paper towels.
  2. 2In a large skillet, heat the vegetable oil over medium heat.
  3. 3Add the chopped onion and garlic to the skillet, sautéing until the onion is translucent.
  4. 4Stir in the bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
  5. 5Season the mixture with thyme, allspice, black pepper, and salt, stirring well to combine.
  6. 6Add the fish fillets to the skillet, gently coating them with the sauce.
  7. 7Pour in the water and lime juice, bringing the mixture to a simmer.
  8. 8Cover the skillet and let the fish cook for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. 9Garnish with chopped green onions and cilantro before serving.
  10. 10Serve hot with rice or bread.
