🥗Healthier: reduced-fat cheese

💰Cheaper: processed cheese

Reduced-fat cheese lowers calories while maintaining flavor.

1

Activate the yeast by mixing 1 cup of lukewarm milk with 2 tsp of sugar and 1 and 1/2 tsp of yeast. Let it sit until foaming.

2

In a large mixing bowl, combine 3 and 1/4 cups of flour, 3 tbsp of sugar, and 1/2 tsp of salt.

3

Add 1 large egg, 15 g of butter, and the activated yeast mixture to the dry ingredients.

4

Use a spatula to mix until a dough forms, then transfer to a floured surface.

5

Knead the dough manually until smooth and elastic, about 10-15 minutes. It should not be sticky and should stretch without tearing.

6

Transfer the kneaded dough to a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.

7

Prepare the filling and frosting by mixing 200 g of cream cheese, 50 g of butter (at room temperature), and 2 tsp of powdered sugar until smooth and creamy. Scrape the sides to ensure even mixing.

8

After the dough has risen, punch it down and lightly knead it before dividing it into pieces of desired size.

9

Shape each piece of dough and place them directly onto a greased baking tray, ensuring they do not stick.

10

Cover the shaped dough and let it rise for another 10 minutes or until doubled in size.

11

Brush the tops with milk or egg wash for color before baking.

12

Bake in the oven for 15-20 minutes until golden brown.

13

Let the baked ensaimada cool completely before filling and frosting.

14

Use a chopstick or bread knife to create a hole in the baked ensaimada for filling.

15

Fill a piping bag with the cream cheese frosting and pipe it into the holes of the ensaimada.

16

Frost the top of the ensaimada with the remaining cream cheese frosting and generously sprinkle cheese on top.
