Start by washing and finely chopping the cucumber and red onion, aiming for uniform size with the chickpeas.
Drain some olives and quarter them for easier mixing.
Drain one can of tuna packed in olive oil and keep the oil from the other can for the vinaigrette.
Flake the tuna to the desired texture.
Add the quartered olives, chopped cucumbers, chopped red onion, and about 1 cup of rinsed and drained chickpeas to the tuna.
Season the mixture with black pepper, red pepper flakes, garlic powder, and salt.
Add about 4 to 5 tablespoons of red wine vinegar and mix everything thoroughly.
Transfer the tuna salad into a glass meal prep container and store it in the fridge for up to 5 days.
For serving, pile the salad in a ramekin and drizzle with balsamic glaze.
Boil about 1 cup of orzo in salted water until cooked, then drain and rinse.
Wash and chop brussels sprouts, red onion, and asparagus, and mince garlic.
Transfer the chopped vegetables to an aluminum foil-lined baking sheet, drizzle with olive oil, and season with black pepper, red chili flakes, onion salt, and 3/4 of the minced garlic.
Roast the vegetables in the oven at 425°F for 15 to 20 minutes until tender and slightly colored.
In a mason jar, combine the juice of 2 lemons, olive oil, red chili flakes, black pepper, parsley flakes, onion salt, and a drizzle of honey to make the dressing.
Season the salmon with paprika, parsley flakes, and Trader Joe's chili lime seasoning, then let it marinate for 10 to 15 minutes.
Sear the salmon in a pan with olive oil or spray until cooked through.
In a bowl, combine the drained orzo, roasted vegetables, crumbled feta cheese, and the lemon dressing, mixing well.
