Add 1/2 cup of tricolored quinoa into a jar.

Cover the quinoa with water.

Place cheesecloth or a paper towel over the jar and secure it with a rubber band.

Let the quinoa soak at room temperature for about 12 hours.

After 12 hours, drain the water from the quinoa.

Rinse the quinoa and allow it to sit on the bench out of direct sunlight.

Twice a day, rinse the quinoa, pour out the water, and place it back on the bench.

After 1-2 days, tiny sprouts will begin to appear on the quinoa.

Once you see tiny sprouts, add water to the quinoa and cover it with a lid instead of cheesecloth.

Set the jar aside to ferment for 1 to 3 days until the liquid becomes cloudy and bubbly.

Once the rejuvelac is cloudy with bubbles, it is ready to be stored in the fridge.
