Rejuvelac

Cover 1/2 cup of wheat berries with filtered water in a one quart jar and swirl around.

Drain the water from the jar and refill with more filtered water.

Cover the jar with cheesecloth and secure it with a rubber band, string, or canning ring.

Let the jar sit at room temperature for 8 to 12 hours.

After soaking, drain the water off and rinse the wheat berries, then strain them again.

Shake the wheat berries into the jar onto its side and set at room temperature.

Rinse the wheat berries twice to three times a day until little tails start to appear.

Let the jar sit overnight after shaking the wheat berries to the side.

Once tails appear, do a final rinse and refill the jar with filtered or spring water, replacing the cheesecloth.

Let the jar sit for 24 to 72 hours depending on ambient temperature.

Once fermentation is complete, the rejuvelac will taste grassy or earthy and may fizz or bubble.

When bubbles are visible in the jar, drain the rejuvelac into another jar through cheesecloth using a canning funnel.

Lightly put a lid on the jar of rejuvelac as it will continue to ferment in the fridge.

Store the rejuvelac in the fridge for about a week, discarding if it smells like vomit.

Feed the leftover wheat berries with tails to local wildlife.
