1

Pour 1/4 cup spring wheat berries into a jar.

2

Fill the jar with water to soak the wheat berries.

3

The next day, pour off the water from the jar.

4

Fill the jar with water again, wetting all the seeds, then pour it off again the next day.

5

Repeat the process of filling the jar with water and pouring it off for a total of two days until you see little sprouts on the wheat berries.

6

Once sprouted, place the wheat berries at the bottom of a clean jar and fill it up with water.

7

Let the mixture sit for two to three days to ferment, stirring gently in the morning and evening with a wooden chopstick.

8

After two to three days, check the smell; it should have a slightly sour, lemonade-like taste.

9

Pour off the liquid into another jar to decant the rejuvelac.
