1

Wash the bitter leaf thoroughly to reduce bitterness, then set aside.

2

In a large pot, boil the beef with water until tender, about 1-1.5 hours.

3

Add shrimp to the pot and cook for an additional 5 minutes until pink.

4

Remove the meat and shrimp, reserving the broth, and chop into bite-sized pieces.

5

In a separate pan, heat palm oil over medium heat until shimmering.

6

Add chopped onions, garlic, and ginger, sautéing until fragrant, about 3-4 minutes.

7

Stir in chopped tomatoes and bell pepper, cooking until softened, about 5 minutes.

8

Add the groundnut paste, mixing well to combine with the vegetables.

9

Pour in the reserved broth gradually, stirring to achieve a smooth consistency.

10

Add the chopped beef and shrimp back into the pot, stirring to combine.

Incorporate the washed bitter leaf, mixing until well distributed.

12

Season with salt, black pepper, and seasoning cubes to taste.
