2 cups chickpeas (soaked overnight)
2 medium potatoes (peeled and diced)
1 large onion (finely chopped)
2 medium tomatoes (pureed)
2 green chilies (slit)
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp red chili powder
2 tbsp oil
Salt to taste
Fresh coriander leaves (for garnish)

Heat oil in a pan over medium heat.

Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Stir in ginger-garlic paste and green chilies, sauté for another minute.

Add the pureed tomatoes and cook until the oil separates from the mixture.

Add diced potatoes and soaked chickpeas to the pan.

Sprinkle in turmeric, coriander powder, red chili powder, and salt. Mix well.

Add enough water to cover the chickpeas and potatoes, bring to a boil.

Reduce heat, cover, and simmer until the potatoes are tender and chickpeas are cooked (about 20-25 minutes).

Stir in garam masala and cook for another 5 minutes.

Garnish with fresh coriander leaves before serving.
