Pour 1/2 cup of red wine vinegar over 8 chicken thighs and season with 1/4 cup of Raquel's seasoned salt, ensuring thorough coverage on both sides.

Slice 1 medium onion, 1/2 yellow bell pepper, and 1/2 orange bell pepper, and prepare 4 cloves of minced garlic, 2 cups of diced ripe tomatoes, and 1 whole finely diced scotch bonnet pepper.

Brown the chicken skin side down for approximately 3 minutes per side, then set aside on a plate lined with paper towels.
