Prepare the glaze by adding 1/2 cup of brown sugar to a pot on the stove.
Add 1/2 cup of honey to the pot.
Stir in 1 tablespoon of Dijon mustard, 1/4 teaspoon of ground cloves, 1 tablespoon of minced garlic, and 1/4 cup of pineapple juice.
Cook the mixture on medium heat until well combined and it comes to a simmer.
Once the sugar has dissolved, place the 7 lb boneless spiral ham in the crockpot.
Pour the glaze over the ham, ensuring to get the liquid inside the layers as much as possible.
Place pineapple rings on top of the ham and secure them with toothpicks, aiming for one on each side.
Cover the crockpot and cook on high for about 2.5 to 3 hours, or on low for 4 to 5 hours.
After cooking, remove the pineapple and toothpicks and set them aside.
(Optional) Transfer the ham to a roasting pan and broil for 3 to 5 minutes to brown the outside.
After broiling, drizzle some of the cooking juice over the ham.
